Cauliflower and chickpea picatta
I add more garlic, saute the chickpeas before the shallots, and finish with a little parmesan. Sometimes the sauce needs another tablespoon of butter, depending on how tart the lemon was.
I don't flip the cauliflower while it's roasting and I put it as close to the oven heating element as I can because char on one side is a good idea.
I have a gas oven, and I don't love it for various reasons. But if you crank it high and put a baking sheet directly on the floor of the oven, it's about as close to an at home plancha as you'll get.
